I’ve spent the last 8 years cheering on a collegiate-turned-professional runner, and it’s been quite the adventure!
A little bit of back story
Clayton has grown a lot as an athlete, and I’ve grown alongside him. I remember trying to surprise him on our first anniversary by making his favorite childhood meal—beef stroganoff over noodles. It was so hard for me! I remember setting the pan on the table and realizing that I hadn’t even thought about making any side dishes or vegetables. He ate three platefuls and still told me that he loved it, but I knew that I had a lot more to learn.
Over the years, I’ve spent a lot of time in the kitchen, and I’ve figured a few things out. I’ve learned from experts, books, the internet, and other athletes. I even read cookbooks for fun sometimes. But mostly, I’ve plated a lot of meals and washed a lot of dishes. I’m not perfect at feeding my runner, but I’ve come a long way.
And now we’re here
After we came home from the Olympics in August, I knew that I needed an extra dose of motivation to commit to Clayton’s NYC marathon build. I decided to take Jackie’s fueling course to return to the foundations of nutrition and really dial in the basics. It was so satisfying to see Clayton perform so well in NYC on such a quick turnaround from the challenging Olympics course and for his third marathon in 9 months. Credit is due to many sources, but I believe that nutrition played a role in that success.
As we begin this next build to a spring marathon, I’m delighted to share with you this meal plan that Jackie has helped me create! We’ve curated recipes created by the fantastic duo Olivia and Annie. They come from running and dietetics backgrounds themselves, and they’ve created some delicious dishes!

I’ll send this free newsletter weekly with training & life updates and meal plans for the coming week. In the paid subscription, you’ll also find weekly nutritional training tips from Jackie and a grocery list with everything you’ll need to make the recipes found in the meal plan.
While Jackie and I have curated this meal plan to match the phases of marathon training, these recipes are suited for anyone, marathoner or not! These meals can be plated to fit every phase of life.
We are omnivores, so you’ll find recipes with meat, fish, grains, starches, dairy, sweets, and plenty of plants. We recognize that there are many needs and preferences, so feel free to alter as necessary. As an additional note, I’m not able to have dairy, so for this meal plan we’ve chosen to avoid meals that are extra milk-heavy or cheesy, and I’ll use dairy-free substitutions as necessary. Don’t let this limit you!
